Holy Guacamole!

I am a foodie, that is for sure.  I grew up in a family of foodies, I worked in upscale restaurants for a number of years and  I consider myself to be a confirmed culinary snob, a gourmand if you will. So what does a foodie do when following a healthy lifestyle, eating to stay lean and mean and on top of her game?

First, I indulge every now and then-that's a given-and there is nothing wrong with that!  IF, every now and then does not turn into...every day.  Then, I am always looking for new and interesting recipes to satisfy my craving for undeniably good food that fits in with my healthy lifestyle goals.
I feature LivingFuel SuperGreens protein in my online store. It is a wonderful product that works great when I want a high-quality vegetarian protein alternative that is packed with nutrients and tastes great.  I was first introduced to LivingFuel when I read Olympic swimmer Dara Torres' biography where she shares her secrets for staying competitive as an athlete against "women" literally half her age (and beats them a good deal of the time.)  Dara loves LivingFuel and if it's good enough for an Olympian, it's probably good enough for me (but I always check everything out first anyway.) 

With the summer Olympics right around the corner, I wanted to share a great recipe that the folks at LivingFuel shared with me.  They've combined one of my favorite healthy fats with a great source of protein; yay!  You don't see that too often.  It's usually just chips, chips, chips (and
carbs, carbs, carbs) with your guacamole.  Well, not anymore!  Check out the recipe below and let me know if you like it as much as I do!  But you'll have to get some LivingFuel SuperGreens first! Mix up a batch while you munch along with the summer Olympics.  

 Go get 'em Dara! 
 
1 scoop LivingFuel SuperGreens
2 medium organic Hass avocados
1 diced organic tomato
½ chopped organic onion
1 teaspoon extra virgin olive oil
Juice from one organic lemon (or lime)
Sea salt and fresh ground pepper to taste

Shell the avocado and remove the pit.  Mash the avocado and mix in the ingredients.

Try other great spices and herbs to taste such as cilantro, cumin, cayenne pepper, and fresh garlic.

Enjoy with organic corn chips, sliced colorful bell pepper, baby carrots or with just a spoon!
